Black Bean Tacos with Mango & Chilli Dressing
- In a medium bowl, add the red onion and pour over the red wine vinegar and salt. Use tongs or your hand to mix through and coat well. Allow the red onion to pickle for 10 minutes.
- Compile the cooked black beans, avocado, chilli, coriander and carrot (and any other of your favourite taco ingredients) into small bowls, ready for people to serve themselves
- Cook your taco shells as per the instructions on the packet
- Assemble your tacos however you please and drizzle generously with
