Ingredients
- 1/2 cup Ozganics Balsamic Dressing
- 2 chicken breast
- 1 red capsicum, sliced
- 1 cup rice
- Salt and pepper to taste
- 1 tbsp butter
- 2 garlic cloves, minced
- 1 cup chopped tomatoes
- 2 cups water or chicken broth
Method
1. Marinate the Chicken: Marinate chicken breasts in Ozganics Balsamic Dressing for at least 30 minutes.
2. Roast the Capsicum: Preheat the oven to 200°C. Place sliced capsicum on a baking tray, drizzle with olive oil, and season with salt and pepper. Roast for 20-25 minutes until soft and slightly charred.
3. Cook the Rice: In a saucepan, melt the butter over medium heat. Add minced garlic and cook until fragrant, about 1 minute. Add rice and toast for 2 minutes, then stir in chopped tomatoes.
