With chicken marinated and glazed with Ozganics Balsamic Dressing, this hearty dish has a rich, tangy flavour that pairs beautifully with the sweetness of roasted capsicum. The rice is cooked with garlic, butter, and fresh tomatoes, adding a subtle depth that complements the dish. This recipe brings together a satisfying mix of textures and tastes, making it a deliciously balanced and healthy meal!

Ingredients

  • 1/2 cup Ozganics Balsamic Dressing 
  • 2 chicken breast
  • 1 red capsicum, sliced
  • 1 cup rice
  • Salt and pepper to taste

 

  • 1 tbsp butter
  • 2 garlic cloves, minced
  • 1 cup chopped tomatoes
  • 2 cups water or chicken broth

Method

1. Marinate the Chicken: Marinate chicken breasts in Ozganics Balsamic Dressing for at least 30 minutes.

2. Roast the Capsicum: Preheat the oven to 200°C. Place sliced capsicum on a baking tray, drizzle with olive oil, and season with salt and pepper. Roast for 20-25 minutes until soft and slightly charred.

3. Cook the Rice: In a saucepan, melt the butter over medium heat. Add minced garlic and cook until fragrant, about 1 minute. Add rice and toast for 2 minutes, then stir in chopped tomatoes. Add water or broth, bring to a boil, reduce heat, cover, and simmer for 15 minutes or until rice is cooked. Fluff with a fork.

4. Cook the Chicken: Heat a pan over medium heat. Sear the marinated chicken breasts for 5-7 minutes on each side until fully cooked, glazing with additional balsamic dressing as they cook.

5. Serve: Place a bed of rice on each plate, top with roasted capsicum, and add the balsamic glazed chicken on top. Enjoy!
