Ingredients
- 1 jar of Ozganics Medium or Mild Salsa
- 2 cups mexied vegetables (zucchini, capsicum, sweet potato)
- 1 tsbp olive oil
- 4 whole wheat tortillas
- 1 1/2 cups shredded cheese (cheddar or a dairy-free alternative)
- Coriander
- Salt and pepper to taste
- 1 tsp smoked paprika
Method
1. Preheat the oven to 200°C. Toss the vegetables in olive oil, smoked paprika, salt, and pepper. Roast for 20-25 minutes until tender and slightly caramelized.
2. Once the vegetables are cooked, place a tortilla in a heated skillet over medium heat. Add a layer of cheese and roasted vegetables, then top with another tortilla. Cook for 2-3 minutes per side until golden brown and the cheese is melted.
3. Repeat with remaining tortillas.
