Ingredients
- 1 jar of Ozganics Medium or Mild Salsa
- 900g boneless, skinless chicken thighs or breast
- 1 large onion, sliced
- 3 garlic cloves, minced
- 1 tbsp olive oil
- 1/2 tsp chilli powder (optional)
- Fresh coriander (optional, for serving)
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 cup chicken broth
- 1 tbsp lime juice
- Cooked rice or tortillas
- Your personal favourite taco toppers
Method
1. Lightly grease the slow cooker insert with cooking spray or a small amount of olive oil.
2. Sear the Chicken (Optional):
In a large skillet, heat olive oil over medium-high heat. Season the chicken with cumin, paprika, chili powder (if using), salt, and pepper. Sear the chicken for 2-3 minutes on each side until browned. This step adds extra flavor but can be skipped if you're short on time.
3. Place the sliced onion and minced garlic at the bottom of the slow cooker. Arrange the chicken on top of the onions and garlic.
4. Pour the jar of Ozganics Salsa over the chicken. Add chicken broth and lime juice. Stir gently to combine.
5. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and easily shreds with a fork.
6. Once cooked, use two forks to shred the chicken directly in the slow cooker, mixing it with the sauce. If you prefer, you can remove the chicken and shred it on a cutting board, then return it to the slow cooker.
7. Garnish with chopped fresh coriander. Serve the pulled chicken over cooked rice, in tortillas for tacos, or alongside your favourite sides and taco toppings.
