Tikka Masala Magic – One Tray Wonder

Ingredients

  • 4 chicken marylands (or cauliflower steaks for plant-based)
  • 1 jar Ozganics Tikka Masala
  • 1 zucchini, sliced
  • 1 small red onion, chopped (half for cooking – optional)
  • 1 tbsp olive oil
  • 1 tsp salt
  • Fresh coriander & lime wedges to serve
  • Coconut yoghurt (optional)
  • Turmeric rice & naan to serve

Method

  1. Preheat your oven to 200°C (fan-forced).
  2. Place chicken in a large baking tray and season with salt.
  3. Add zucchini and onion around the chicken.
  4. Pour over ¾ of the Tikka Masala sauce and drizzle with olive oil.
  5. Use tongs or clean hands to mix and coat everything evenly.
  6. Bake uncovered for 40–45 minutes until golden, cooked through, and bubbling.
  7. Spoon over remaining sauce, heat through and serve hot with rice, naan, and garnishes.

Tips & Add-Ons

  • Vegan version? Swap chicken for cauliflower steaks or firm tofu.
  • Want to mellow the spice? Stir a spoon of coconut yoghurt through the sauce.
  • Leftovers? Shred chicken into wraps, grain bowls or salads the next day.
